It’s a fairly hard dense wood, bit tougher to carve out than something like poplar or pine
It’s quite open pored for using with food, too.
I am a big fan of Cherry myself. Seems to be food contact safe and I find it a joy to work with.
I love the runes and vines! I can’t see a post about spoons though without thinking of this classic:
